Goma-ae (Japanese Spinach Salad with Sesame Dressing)

Ingredients (use vegan versions):
- 1 lb. frozen or fresh baby spinach
- 1-2 tablespoons mirin (vegan rice wine) or sake, or vegan white wine
- 1-2 tablespoon toasted sesame oil, or ground toasted sesame seeds
- 1-2 tablespoons tamari or other good brewed soy sauce, or teriyaki sauce
- 1 teaspoon vegan sugar (omit if using teriyaki sauce)
Directions:
This couldn't be easier! Thaw the frozen spinach and drain
well. Or, if you're using fresh spinach, just wilt, drain,
and refrigerate until cool. Mix the sauce ingredients
together, and add to the spinach. That's it! Serve cool, or
at room temperature.
The measurements of all the dressing ingredients are
flexible. Use the smaller amount, and add more if you like,
according to your taste. If you're using teriyaki sauce,
omit the vegan sugar. (I like Kikkoman or San-j, but I would
avoid using one with fruit juice.)
Try this with broccoli, too!
Serves: 2-4
