Falafel Salad

Ingredients (use vegan versions):

  • 6 Falafels (a good recipe is in The Art of the Sandwich by Jay Harlow)
  • about 2 cups of chopped lettuce
  • about 1 cup of chopped fresh tomato
  • Tahini dressing:
  • 1 clove of fresh garlic minced
  • 3 teaspoons of lemon juice
  • 1/3 cup vegan soymilk
  • 1/4 teaspoon salt
  • 2 1/2 tablespoons of tahini
  • 2 whole wheat vegan pita breads
Directions:

Break falafel and pita into bite sized pieces, toss with tomato and lettuce, dress with tahini dressing, and EAT.

YUM!

Serves: 2

Preparation time: 20 minutes
