Ginger Marsala Fruit Salad

Ingredients (use vegan versions):
- 1/4 cup marsala vegan cooking wine
- 1 good sized chunk fresh ginger root, grated
- 1 tablespoon vegan cream cheese
- 1 tablespoon vegan sour cream
- 1 15.4 oz can crushed pineapple, drained
- 1 good sized granny smith apple, peeled and chopped
- 1/4 cup dark raisins
- 1 large banana, sliced, then halved
- 1 tablespoon flax seed meal
- crystallized ginger strips, for garnish
- optional: walnuts, candied cherries, whatever
Directions:
In a small saucepan on low heat, simmer marsala and ginger about 5-7 mins. Add the vegan
sour cream and cream cheese, mix well into the vegan wine mixture. Drain pineapple well, and add
to pan, turning heat up to simmer well, and reduce liquid. Transfer pineapple/vegan wine mix
into a bowl , preferably one with a cover, and add raisins, apple, flax seed meal, and
whatever else you want to put in, cover, shake well, and chill well. Serve in custard
cups, garnish with strips of crystallized ginger.
