German Potato Salad

Ingredients (use vegan versions):
- 1 lb. potatoes, cut into quarters
- 3 tablespoon vegenaise (vegan mayo)
- 2 tablespoon packed light vegan brown sugar
- 1 teaspoon spicy brown vegan mustard
- 3 tablespoon cider vinegar
- green onion
- fake bacon bits
Directions:
Boil potatoes until tender. Drain. Stir vinegar over
potatoes. In another bowl- mix together vegan mayo, brown
vegan sugar,and spicy brown mustard. Mix together with potatoes.
Garnish with green onion and fake bacon bits. Best if
chilled for 1 hour.
