Grilled Spinach Artichoke Sandwiches

Ingredients (use vegan versions):
- sliced sourdough bread (2 slices per sandwich)
- vegan mayonnaise
- sliced tomato
- varinated artichoke hearts
- fresh spinach
- olive oil
Directions:
Lightly brush olive oil on the sourdough slices and
grill until lightly toasted. Layer mayo (lots of it), spinach,
tomato, marinated artichoke hearts.
For a change of pace, use vegan pesto sauce
instead of mayo.
For a healthier alternative, just lightly toast the
sourdough instead of grilling it.
Tasty, quick, yummy!
