Avocado and Mixed Greens Sandwich

Ingredients (use vegan versions):
- 1 cup of mixed greens
- 1/2 avocado, sliced
- 2 slices of tomato
- vegan bacon bits
- vegan bread (wrap, pita, or baguette)
- For dressing:
- 1 teaspoon cider vinegar
- 1 tbsp olive oil
- salt and pepper (to taste)
- pinch of vegan sugar
Directions:
Arrange the greens, tomato, and avocado
on your choice of bread and top with the
vegan bacon bits (as little or as much as you
like....I like a lot!)
In a small bowl mix the ingredients for the
dressing and pour over sandwich filling. It's
as easy as that, and it's really tasty too!
