Ingredients (use vegan versions):
- 1 package or 1 cup dry bulk Cous-Cous
- 1 cup frozen peas
- 5 okra stalks
- 1 ear corn
Directions:
Prepare cous-cous according to package
directions.
Wash, trim and slice okra into rounds
Clean corn and roast over open flame or
in broiler.
Cut corn off cob amd mix with peas,
okra and cous-cous in a big bowl- serve
and enjoy!
You can add all kinids of other stuff
like cooked lentils, balck beans etc.
Sometimes, I serve this for breakfast!
