Authentic Veggie Subs

Ingredients (use vegan versions):
- 2 slices of favorite organic, vegan tofu "cheese"
- thin slices of green pepper
- thin slices of onion
- thin slices of tomatoes
- sliced pitted black olives
- sliced canned mushrooms - drained
- romaine lettuce leaves - or your favorite
- drizzle of Italian Dressing or oil & vinegar
- 1 sub bun per person
Directions:
Split sub bun in 2 for top & bottom. If you
desire a "Hot Sub" preheat oven to 350 degrees.
Drizzle dressing or oil & vinegar on inside of
sub bun top, then place the 2 slices of vegan cheese on
top of that. Set top bun aside or on cookie sheet
if you plan to heat sub. Take bottom bun & "load
up" to your liking of veggies. Then put top on
bottom & heat in oven @ 350 degrees for 10 mins.
Or if you prefere - it's ready to eat cold. Enjoy!
