Greek Rice Salad

Ingredients (use vegan versions):
- boil-in-bag brown rice
- water
- green bell pepper
- onion
- tomato
- greek salad dressing
- freshly ground black pepper
- chick peas
Directions:
While boiling the rice using the amount of water recommended
on the package, chop up the bell pepper, onion, and tomato.
When rice is done, open package and pour into a bowl. Mix
in the vegetables and chick peas, stir in greek dressing,
and grind pepper over the top. Good hot or cold- great for
lunches with red grapes on the side!
I also add feta cheese, because I eat dairy, and if you can
find some sort of substitution for this, PLEASE use it!!!
The flavor adds so much to the dish. You can also mix some
raisins in if you want.
