Quick Lunch Miso Soup

Ingredients (use vegan versions):
- 1 teaspoon miso
- 2 teaspoons dried scallion
- 1/3 block of tofu, cubed
- soy sauce to taste
Directions:
Put tofu, scallions, and miso into a microwave-safe
container.
At lunchtime, either add cold water and microwave until hot,
or add hot water.
Stir until the miso is incorporated.
Enjoy!
