Easy Chili

Ingredients (use vegan versions):

  • 2 large onions - chopped
  • 2 cans red kidney beans (do not drain)
  • 1 large (28 oz) can stewed tomatoes
  • 2 - 4 oz green chili peppers chopped (more or less to taste)
  • 1/4 cup chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • red pepper/cumin to taste
Directions:

Add everything to a big pot. Bring to a boil. Simmer with lid on (but let some of the steam escape) for two hours, stirring about every ten minutes. Enjoy!

Serves: 4

Preparation time: 10 minutes
