Pasta with Beets

Ingredients (use vegan versions):
- 1-2 cloves garlic, minced
- 3/4 cup onions, finely chopped
- 2 tablespoon vegan white wine
- 2 cups beets, diced
- 1/2 cup vegan white wine
- 1 tablespoon oregano
- 1/4 tablespoon crushed red pepper, or to taste
Directions:
Saute onions and garlic in vegan wine until fairly soft. Add beets (I bet you
could add the greens here, too!) and cook for about five minutes. Add
vegan white wine and spices and cook until beets are tender. Serve over pasta.
