Garlic and Spinach Pasta

Ingredients (use vegan versions):

  • 250 ml of any kind of pasta (shells are best)
  • 250 ml water
  • 250 ml vegan soymilk
  • 2 tablespoon non-hydrogenated vegan margarine
  • 100 ml nutritional yeast flakes
  • 50 ml lemon juice
  • 125 ml chopped fresh spinach
  • parsley, salt and pepper to taste
  • 3-4 medium sized mushrooms
  • 1 medium sized onion
  • As much garlic as you can handle
Directions:

Combine water, soy milk and margaine in a pot a bring to a boil. add pasta, nutritional yeast, lemon juice, spinach and seasonings. Return to a boil and let simmer.

Chop mushrooms, onions and garlic and saute in 2 tbsp of water. Add vegetables to the pot and simmer until sauce reaches desired thickness. Cover and let stand for 3 minutes, then serve.
