Garden Fresh Salsa

Ingredients (use vegan versions):
- 2-3 medium tomatoes, quartered
- 1 small red onion, quartered
- 1 clove garlic
- 1 mild green chili, seeded & cored
- 1 handful cilantro
- 20 stalks fresh dill, optional
- 1 tablespoon white vinegar or lime juice
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon vegan sugar, or to taste
- dash cumin
- dash paprika or chili powder, to taste
Directions:
Place garlic and chili pepper in food
processor. Process 5 seconds. Add
onion and process 5 seconds. Add
cilantro and optional dill. Process 10-
20 seconds. Add tomatoes and process
until correct consistency, stopping
occasionally to scrape sides and
rearrange any large tomato chunks.
Refrigerate at least one hour to allow
flavors to meld. Yum!
