Alison's Balsamic Vinaigrette

Ingredients (use vegan versions):
- 2 teaspoon vegan Dijon mustard
- 2 tablespoon balsamic vinegar
- 3-4 tablespoon olive oil
Directions:
Balsamic vinaigrette a la Alison, my
mom:
Stir together Dijon and vinegar in a
small jar. Add olive oil in a slow
stream, whisking constantly. The
mustard and whisking help emulsify for
a beautiful texture. If it tastes to
mustardy for your liking, add a little
more vinegar and or/oil. Shake before
serving.
Serves: 4-6
