Black Bean Salsa

Ingredients (use vegan versions):
- 1/2 teaspoon salt
- 1 cup tomato
- 2 15 oz cans black beans. Drained and rinsed.
- 1 16 oz can white shoe peg corn. Drained.
- 6 tablespoon lime juice
- 6 tablespoon olive oil
- 1 1/2 teaspoon ground cumin
- 1/2 cup red onion. Chopped fine.
- 1/4 cup fresh cilantro
Directions:
I use my food processor for the tomatoes,
cilantro, and the red onions because I am lazy.
Combine all but the tomatoes until you are ready
to serve it, then add a little more lime juice.
This is really good with lime flavored chips.
Serves: a lot
