Ingredients (use vegan versions):
- Olive or canola oil to thinly cover bottom of pot
- Onion, chopped
- Garlic, minced
- Red, green, yellow, OR orange pepper, chopped
- Carrot, cut into coins
- Tomatoe, peeled, seeded, and chopped
- Tomatoe paste
- Spinach leaves, torn
- Canned green beans, cut in 1" pieces
- Italian herb mix
- Hot pepper flakes
Directions:
I like to just throw things together when I'm making a sauce
or topper, so that's why there's are measurements. 'Kay?
Also, I left out measurements so that you can adjust to your
taste.
Heat the oil in a pot, then sauté the onion and garlic.
Once that's done, add the carrots. After, oh, five minutes,
add the pepper. Another four or five minutes, add the green
beans. Two minutes, add the spinach and your herbs and
spices. Wilt the spinach, then serve on your pasta. It's
rather chunky and crunchy, but it's really good! ^_^
Serves: As many as you want
