Eileen's Serious Spaghetti "Bolognese" Sauce

Ingredients (use vegan versions):
- 32 oz chopped diced tomatoes in juice
- 32 oz tomato sauce
- 1 pound firm tofu (Chinese-style, water squeezed out), crumbled
- 1 pkg. "Just Like Ground" (Italian-style, by Lightlife, I think)
- 1 can mushrooms
- 1 onion, diced
- 6-7 cloves garlic, minced
- 2 bay leaves
- Oregano, bazil, thyme (1 tablespoon each, adjust to suit)
- Tabasco, to taste
Directions:
Sautee onion and garlic in oil until soft. Dump in a big
pot with everything else. Bring to a boil, stirring
sometimes, until almost burning. Turn down the heat, cover,
and simmer for 1/2 to one hour. Remove bay leaves and serve
over any kind of pasta, baked potatoes, on pizza, in
lasagna...
