Greek Cucumber Salad

Ingredients (use vegan versions):
- 2 medium cucumbers
- 1 small red onion
- 2 teaspoons salt
- 3 tablespoons vinegar
- 7-10 chopped green olives
- 3 tablespoons water
- 1/2 teaspoons vegan sugar
- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
Directions:
Pare and cut cucumbers and onion into thinly
sliced pieces. Seperate onion slices into rings.
Add Salt. Let stand for 30 minutes.
Squeeze out any liquid, and place cucumber in a
bowl. Combine remaining ingredients.
Pour over cucumbers. Refridgerate until served.
