Flat Tofu Enchilada

Ingredients (use vegan versions):
- 1 1/2 cups red chili sauce
- 12 corn tortillas
- 16 oz package firm tofu
- 4tablespoon minced white/red onion
- 1/2 cup shredded non-dairy cheese
Directions:
Dice tofu. Place in a non-stick pan with 3/4 cup red chili. Stir while heating for 2
minutes.
Steam individual tortillas in non-stick fry pan for 15 sec using one tsp. water. Flip
over for 10 more seconds.
Place one tortilla on a plate. Cover with 1/8 of the red chili tofu mixture and 1/2 tbls
onion. Repeat for second layer. Cover with third torilla and top with 1/4 of remainig red
chili sauce.
Sprinkle with shredded cheese.
Heat in microwave on high for 90 sec.
Ready to eat.
