Embarrassingly Easy Taco Filling

Ingredients (use vegan versions):
- textured soy protein
- cooking oil
- soy sauce
- taco seasoning
Directions:
This is way too easy and probably doesn't even belong here,
but I have to submit it because my children, including the
non-vegetarian neighborhood children who all somehow find a
way to my house, just clamor for it (their parents are now
asking for the recipe).
Take an iron skillet (using iron helps to darken the final
product a bit which is aesthetically appealing) and heat a
bit of oil in it. Fry the textured soy protein briefly while adding some soy
sauce. I'm not sure why I do this first step, but maybe it
adds a meatier quality to the dish.
Add water to cover and simmer, while mixing in the dry taco
seasoning to taste.
When most of the water has evaporated (leaving only a
pleasant moistness), taste and adjust seasoning if
necessary.
Serve with heated crisp taco shells or soft tortillas.
Chopped lettuce and some shredded vegan "cheddar cheese"
makes a nice garnish.
Note: regarding the "non-vegetarian" children, they are now
turning their moms and dads on to vegetarianism, I think
(at least I'm getting a lot of phone calls).
Pretty cool.
