Exciting Black Bean Tacos

Ingredients (use vegan versions):
- 16oz can black beans
- 1/2 cup chopped onions
- 1/2 cup rice (uncooked)
- 1/2cup sweet whole kernel corn
- 1 can mexican style/w jalapenos diced tomatoes
- 1 pkg of prepack taco seasoning
- Lettuce, tomatoes- chopped
- 18 taco shells
- 1 pkg vegan cheese blend
- salsa
- vegan sour cream
Directions:
Combine in a large skillet black beans(drained), corn
(drained), tomatoes(undrained), and taco seasoning (prepare
according to pkg directions. bring to a medium boil, once
boiling add uncooked rice. Turn to low and let simmer for
10-12min or until bean mixture has absorbed seasoning
mixture.
Meanwhile heat taco shells in microwave or oven.
When bean mixture is done, fill the bottom of the each taco
shell, top tacos with lettuce, tomatoes, cheese blend,
salsa and crown them with sour cream.
