Fruit Sweetened Oatmeal

Ingredients (use vegan versions):

  • 2 cups vanilla flavored almond, soy or rice milk
  • 1 cup whole oats
  • 1 apple, not peeled, diced
  • 1 tablespoon (or more) chopped walnuts
  • 1 large fresh date, pitted, chopped
  • cinnamon to taste
Directions:

Put all ingredients into a medium saucepan. Bring to a boil, stirring occasionally. Turn down to simmer for approximately 10 to 15 minutes, stirring to prevent sticking. Add a bit more liquid if the oats are drying up before they are really creamy.

The longer you can get the oats to simmer in the liquid the softer and creamier they will be. The apple should be very soft when done. My two year old son loves this oatmeal, and when have a large bowl in the morning, I find it really curbs my appetite for sometime. I never was a fan of oatmeal unless it was doused in butter and vegan sugar, so I was pretty pleased with myself when I discovered it could really be good without all that crap it in.
