Breakfast Tofu Fruit Spin

Ingredients (use vegan versions):
- 200 mgm silken tofu (1/2 lb package)
- 1/2 cup dried fruit, apricots, prunes, or cranberries
- 1 teaspoon of your favorite sweetener (optional)
- water
Directions:
In small saucepan place dried fruit and a small amount of
water to cover. Cook on medium to low until almost all
water is gone and fruit is tender. You have to watch and
ensure that a bit of water remains in the pan. When tender,
take off burner and cool.
Place tofu, cooled fruit and
cooking water in bowl and use an electric handmixer to whip
it all up. Add sweetener only if needed. I seldom add
anything. Place in bowl and put in refrigerator. It firms
up.
Eat for breakfast or a quick snack.
Although these portions are small they are an adequate
breakfast with toast or a roll.
