Eggplant Stew with Jackson Wonders

Ingredients (use vegan versions):
- 1 medium eggplant, diced OR cubed (depending on how much you want to hide it)
- 1 extra large onion, cubed
- 2 cloves garlic, minced
- 2 large tomato, cubed
- 6 oz mushrooms, sliced
- 1 tablespoon basil, or Italian Herb Mix
- 1 1/2 cups water, more or less, to saute onion
- 2 cup Jackson Wonder beans, drained
Directions:
Cook eggplant and onion with garlic and
water. Add other stuff. Cook until
tender.
