Bean Soup

Ingredients (use vegan versions):
- 1 large can black beans
- 1 small can chick peas (cece beans)
- 1 small can red kidney beans
- 3 carrots
- 2 potatoes
- 1 large onion
- 3 cloves garlic
- 1 large green pepper
- cumin, curry powder, Mrs. Dash, salt, pepper, bay leaf
- oil
- 1 small can diced tomatoes
- 1 cube vegetable boullion
Directions:
Cook the onion, garlic, and spices in the oil in a large
saucepan. Add the tomatoes and the bouillion cube. Cut the
carrot, pepper, and potato into 1/2" pieces. Add the beans
to the saucepan along with 1 small can of water. Add the
veggies. Simmer the soup for about half an hour or until
the potatoes and carrots are soft. I like it with whole
wheat pita but you can do whatever you like. Enjoy!
