Banana Walnut Bread

Ingredients (use vegan versions):
- 1 cup unbleached granulated vegan sugar
- 1/2 cup vegan margarine (I used Earth Balance)
- vegan egg replacer for 2 eggs (flax meal blended w/water works best)
- 1 1/3 cups ripe mashed bananas (approx 2 large or three small)
- 2 1/2 cups unbleached all-purpose flour
- 1 slightly rounded teaspoon baking soda
- 1/2 teaspoon sea salt
- 1 cup chopped walnuts
Directions:
NOTE: If possible, purchase whole
walnuts and shell them yourself. Pre-
shelled walnuts tend to taste rancid,
in my opinion.
Heat oven to 375 degrees.
Cream vegan sugar and vegan margarine. Stir in
egg replacer and bananas. Sift
together flour, baking soda and salt.
Add to mixture, along with nuts and
stir well. Pour into loaf pan greased
with margarine and bake approximately
1 hour (will probably take more like 1
hour 15 minutes), until a toothpick
stuck in the middle comes out clean.
Remove loaf from pan and cool on a
wire rack. Makes 8 thick slices.
Serves: 8
Preparation time: 1 hr 15 min to 1 hr 30 minutes
