Ingredients (use vegan versions):
- 1 1/2 cups flour
- 1/2 cup cornmeal
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1 vegan egg replacer
- 1 cup vegan soymilk
- 1/3 cup vegan maple syrup
- 1 cup blueberries
Directions:
Mix dry ingredients, mix wet ingredients, and
stir them together (don't over stir). Spoon into
greased muffin tins and bake at 350 degrees for
20-25 minutes.
Serves: 10-14
