Ingredients (use vegan versions):
- 1 cup whole wheat flour
- 1 cup All-Bran cereal, crouched
- 1/4 cup flax seeds
- 1/2 cup dried currants
- 12 pitted dates, chopped
- 1/2 cup plain, unsweetened applesauce
- 3/4 cup vegan soymilk
- sprinkle baking powder
Directions:
Combine all dry ingredients, including seeds and
fruits in a large mixing bowl. Slowly add
applesauce, then soy milk. Pour into muffin tin,
lightly sprayed with non-stick formula. Bake at
350 for about 15 minutes if you want gooey
muffins, or longer for solid, hard rocks. Let
cool for as long as you can take without
gobbling them all up while no one is watching.
Nutrition Information: About 202 calories per
muffin, only because of the dried fruits and
bran cereal, that are full of iron and fibre.
Serves: 6 muffins
Preparation time: 15 mins.
