Fresh and Zesty Beans and Basil

Ingredients (use vegan versions):

  • 1 can of tomato pieces
  • 1 can of butter beans or any other type of white bean
  • 1 lemon
  • A handful of fresh bazil
  • Fresh chopped garlic (as much as you like)
  • Cracked black pepper
  • Tabasco or chili sauce
  • 1 teaspoon of Olive Oil
Directions:

If your pan is nice and hot, you won't need too much oil. Coat a pan with the oil and add the garlic.
Cook until brown and the aroma is released.
Add the drained beans, the tomotoes with juices and stir through.
Let this sit for 5 minutes then add the chopped basil, cracked pepper and Tabasco sauce if you your mouth so desires.
Once the basil has wilted, pop the lemon in the microwave for 30 seconds to warm (this also promotes the most juice). Then squeeze the fresh juice straight in to the mix. Stir through and serve.

It not only looks good but your mouth will thank you. This is *Delicious* served on it's own or with brown rice.
