Mix 3/4 to 1 cup applesauce with 1 (4.12 ounce) ground cinnamon to form a stiff dough. Roll out to 1/4 inch thickness. Cut with cookie cutters. Make holes for ribbon. Put on cookie rack to dry. Let air dry while flipping occasionally.
