7 lbs. meat (venison or beef) 3 tbsp. salt 1/2 tbsp. pepper (coarse) 2 tbsp. chili powder 2 tbsp. McCormick Hickory smoke salt 1/3 tsp. red pepper 1/2 tbsp. garlic salt
Season meat and let set overnight. Cut meat with the grain, 1/4 inch thick. Smoke for 6 hours in smoker.
