Bistro Mashed Potatoes

5 pounds russet potatoes
1/4 pound butter
1 cup sour cream
1/2 cup whole milk
1 cup shredded cheddar cheese
2 tablespoons chopped cooked bacon
2 tablespoons chopped fresh parsley
Ground black pepper to taste
Salt to taste
Boil potatoes until soft.
Place in mixer; add milk and butter; mix with whip.
Add sour cream, cheese, bacon and add seasonings. If potatoes are too thick add more milk and adjust seasonings as needed.
Serves 12.
