Pumpkin Chocolate Chip Cookies

An eggless cookie that is really very very good!!
2 cups white sugar
1 cup shortening
1 (15.00 ounces) can pumpkin puree
2 teaspoons vanilla
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
12 ounces semisweet chocolate chips (I used white chocolate chips in half the recipe--yum!)
Preheat oven to 375 degrees.
Cream the sugar, shortening, pumpkin and vanilla. Mixture should be light and fluffy when well combined. Sift together flour, baking soda and cinnamon. Stir dry mixture into pumpkin mixture.
Mix till combined, then add chips.
Drop by teaspoons onto an ungreased baking sheet or a sheet lined with parchment.
Bake at 375 degrees for 12-15 minutes or just until set.
Cool on rack and enjoy.
